Description

A delightful poke cake with rich butter pecan and caramel flavors, perfect for any gathering.

Ingredients

  • 1 box vanilla cake mix
  • 3 large eggs
  • 1 cup water
  • 1/2 cup unsalted butter, melted
  • 1 cup heavy cream
  • 1 cup brown sugar
  • 1 cup toasted pecans, chopped
  • 1 teaspoon vanilla extract
  • Whipped cream for serving
  • Extra pecans for garnish
  • Sea salt for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine vanilla cake mix, eggs, water, and melted butter. Mix until smooth.
  3. Pour the batter into a greased 9×13 inch baking pan and bake for 30 minutes, or until a toothpick comes out clean.
  4. Allow the cake to cool completely.
  5. Once cooled, poke holes in the cake using the handle of a wooden spoon, about 1 inch apart.
  6. In a saucepan, combine heavy cream, brown sugar, and vanilla extract over medium heat, stirring until the mixture thickens.
  7. Pour the butter pecan mixture over the cake, ensuring it seeps into the holes.
  8. Chill the cake in the refrigerator for at least 2 hours before serving.
  9. Serve with whipped cream, extra pecans, and a sprinkle of sea salt.

Notes

For best results, serve chilled and use fresh toasted pecans.
