Description

A delightful treat combining creamy cheese and sweet cherries wrapped in flaky puff pastry, perfect for breakfast, brunch, or dessert.


Ingredients

  • 1 package Puff Pastry (thawed according to package instructions)
  • 8 oz Cream Cheese (softened)
  • 1/4 cup Sugar
  • 1 large Egg Yolk
  • 1/4 cup Ricotta Cheese (mascarpone can be substituted)
  • 1 tsp Almond Extract (or vanilla extract)
  • 1/4 tsp Salt
  • 1 tsp Lemon Zest
  • 1 can Cherry Pie Filling (or fresh cherries)
  • 1 large Egg (for washing)
  • 1 cup Flour (for dusting)


Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out the thawed puff pastry. Cut it into squares or rectangles, depending on your preference.
  3. In a bowl, mix together the softened cream cheese, sugar, egg yolk, ricotta cheese, almond extract, salt, and lemon zest until smooth and creamy.
  4. Place a spoonful of the cream cheese mixture on the center of each pastry piece.
  5. Top with cherry pie filling or fresh cherries.
  6. Fold the corners of the pastry over the filling to create a pocket or shape as desired.
  7. Beat the large egg and brush it over the pastry to give it a lovely gloss.
  8. Place the prepared danishes on the lined baking sheet and bake in the preheated oven for 15-20 minutes or until golden brown.
  9. Allow them to cool slightly before serving.

Notes

Serve warm or at room temperature. They can be topped with powdered sugar or a dollop of whipped cream for extra sweetness.
