Ingredients
- 4 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons active dry yeast
- 1 cup whole milk, warmed
- 1/4 cup unsalted butter, melted
- 3 large egg yolks
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Vegetable oil for frying
- Powdered sugar for dusting
- Filling of choice (e.g., pastry cream, jam)
Instructions
- In a large bowl, mix flour, sugar, yeast, and salt.
- In another bowl, combine warm milk, melted butter, egg yolks, and vanilla.
- Gradually add the wet ingredients to the dry ingredients and mix to form a soft dough.
- Knead the dough on a floured surface until smooth and elastic, about 10 minutes.
- Place the dough in a greased bowl, cover, and let rise until doubled in size, about 1 hour.
- Punch down the dough and divide it into small balls.
- Allow the dough balls to rise again until fluffy, about 30 minutes.
- Heat oil in a deep fryer or pan to 350°F (175°C).
- Fry the bomboloni in batches, turning to cook evenly until golden brown, about 5-6 minutes.
- Remove from oil and let drain on paper towels; fill with your chosen filling using a piping bag.
- Dust with powdered sugar before serving.
Notes
Use fresh yeast for the best rise. Monitor oil temperature carefully to ensure perfect frying.
