Description

Light and airy pastries filled with a delicious vanilla custard, perfect for impressing family and friends.


Ingredients

  • 1 cup unsalted butter
  • 1 cup water
  • 1 cup all-purpose flour
  • 1/4 teaspoon kosher salt
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 box instant vanilla pudding mix
  • 1 cup heavy whipping cream
  • 1 tablespoon powdered sugar
  • Optional: chocolate syrup for drizzling


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a saucepan, combine the butter and water. Bring to a boil. Remove from heat and whisk in the flour and salt until a smooth dough forms.
  3. Return the saucepan to low heat and add the eggs one at a time, mixing vigorously after each addition until the dough is smooth. Stir in the vanilla extract.
  4. Pipe or scoop the dough onto parchment-lined baking sheets, forming about 15 mounds.
  5. Bake for 15 minutes, then reduce the oven temperature to 350°F (175°C) and bake for another 25 minutes. Do not open the oven door during this time.
  6. After baking, prick the tops of the puffs to vent steam. Turn off the oven and leave the door ajar for 15 minutes to cool.
  7. For the filling, whisk together the instant vanilla pudding mix, vanilla extract, and heavy cream until smooth and thick. Refrigerate until cool.
  8. Once the puffs are cool, slice each puff in half. Fill the bottoms with the vanilla custard, place the tops back on, and dust with powdered sugar. Chill before serving. If desired, drizzle with chocolate syrup.

Notes

Be sure to measure flour correctly for the best texture. Avoid opening the oven door while baking to prevent the puffs from deflating.
