Ingredients

 - 1 medium onion, chopped
 - 2 cloves garlic, minced
 - 1/2 cup sun-dried tomatoes, chopped
 - 4 cups fresh spinach
 - 4 cups vegetable broth
 - 1 cup heavy cream
 - 12 ounces ravioli (fresh or frozen)
 - Salt and pepper to taste
 - Grated Parmesan cheese for serving
 
Instructions
- Heat olive oil in a pot over medium heat. Sauté the chopped onion and minced garlic until fragrant.
 - Add sun-dried tomatoes and spinach, cooking until the spinach wilts.
 - Pour in vegetable broth and heavy cream, bringing the mixture to a gentle simmer.
 - Add the ravioli and cook until they are tender.
 - Serve hot, drizzling with extra virgin olive oil and sprinkling with grated Parmesan cheese.
 
Notes
For a dairy-free option, replace heavy cream with coconut milk. Frozen ravioli can also be used; adjust cooking time accordingly.
