Ingredients
- 8 oz Cream Cheese (softened)
- 1 cup Almond Flour
- 2 tbsp Coconut Flour
- 1 tbsp Erythritol
- 2 Eggs
- 1 tsp Vanilla Extract
- 1 tsp Baking Powder
- 1 pinch Salt
- 2 tbsp Ground Cinnamon
- 1 tbsp Optional Sweetener for Dusting (powdered erythritol)
- 2 tbsp Butter (for greasing)
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking sheet with butter.
- In a mixing bowl, add the softened cream cheese, eggs, and vanilla extract. Mix well until smooth.
- In another bowl, combine the almond flour, coconut flour, erythritol, baking powder, salt, and ground cinnamon.
- Gradually add the dry ingredients to the wet mixture. Mix until combined and a dough forms.
- Place the dough on a parchment-lined surface and roll it out into a rectangle about 1/4 inch thick.
- Sprinkle the additional cinnamon and sweetener over the dough.
- Roll the dough tightly into a log and slice it into equal pieces.
- Place the roll ups on the prepared baking sheet.
- Bake in the preheated oven for 15-20 minutes or until golden brown.
Notes
Let the roll ups cool slightly before serving. They can be served warm or at room temperature. Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for longer storage.
