Ingredients
- 2 cups glutinous rice
- 1 cup coconut milk
- 1 cup brown sugar
- 1/4 teaspoon salt
- Toasted coconut (for serving)
- Latik (optional, for topping)
Instructions
- Cook the glutinous rice until tender and sticky.
- In a separate pot, combine coconut milk, brown sugar, and salt over low heat until the sugar dissolves.
- Mix the cooked rice with the coconut milk mixture until well combined.
- Pour the mixture into a greased baking dish.
- Bake in a preheated oven at 350°F (175°C) for about 25-30 minutes or until set.
- Let it cool before cutting into squares.
- Serve sprinkled with toasted coconut and drizzled with latik if desired.
Notes
Ensure to let the Biko cool completely before slicing for cleaner cuts. Adjust the sugar to personal taste.
