Description

A traditional Filipino dessert made with glutinous rice, coconut milk, and brown sugar, resulting in a rich, sticky treat that’s perfect for celebrations.


Ingredients

  • 2 cups glutinous rice
  • 1 cup coconut milk
  • 1 cup brown sugar
  • 1/4 teaspoon salt
  • Toasted coconut (for serving)
  • Latik (optional, for topping)


Instructions

  1. Cook the glutinous rice until tender and sticky.
  2. In a separate pot, combine coconut milk, brown sugar, and salt over low heat until the sugar dissolves.
  3. Mix the cooked rice with the coconut milk mixture until well combined.
  4. Pour the mixture into a greased baking dish.
  5. Bake in a preheated oven at 350°F (175°C) for about 25-30 minutes or until set.
  6. Let it cool before cutting into squares.
  7. Serve sprinkled with toasted coconut and drizzled with latik if desired.

Notes

Ensure to let the Biko cool completely before slicing for cleaner cuts. Adjust the sugar to personal taste.
