A cheesy, baked macaroni pie with a Caribbean twist that combines spices and ingredients for a comforting and flavor-packed dish.
Ingredients
- 8 ounces elbow macaroni
- 2 cups sharp cheddar cheese, grated
- 1 cup mozzarella cheese, grated
- 2 tablespoons butter
- 1 cup milk
- 1/2 cup onion, chopped
- 1/2 cup bell peppers, chopped
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Boil the elbow macaroni until al dente, then drain and set aside.
- In a pot, melt butter and sauté the onions and bell peppers until softened.
- Add the milk, garlic powder, cayenne pepper, paprika, and salt and pepper to the pot, and stir until combined.
- Gradually mix in the cheddar and mozzarella cheese until melted.
- Combine the cooked macaroni with the cheese mixture, stirring until well coated.
- Transfer to a greased baking dish and top with additional cheese.
- Bake for 30-40 minutes or until golden brown and bubbly.
- If desired, broil for a few minutes for a crispy top.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Can freeze for up to 2 months.
