Description

A cheesy, baked macaroni pie with a Caribbean twist that combines spices and ingredients for a comforting and flavor-packed dish.


Ingredients

  • 8 ounces elbow macaroni
  • 2 cups sharp cheddar cheese, grated
  • 1 cup mozzarella cheese, grated
  • 2 tablespoons butter
  • 1 cup milk
  • 1/2 cup onion, chopped
  • 1/2 cup bell peppers, chopped
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil the elbow macaroni until al dente, then drain and set aside.
  3. In a pot, melt butter and sauté the onions and bell peppers until softened.
  4. Add the milk, garlic powder, cayenne pepper, paprika, and salt and pepper to the pot, and stir until combined.
  5. Gradually mix in the cheddar and mozzarella cheese until melted.
  6. Combine the cooked macaroni with the cheese mixture, stirring until well coated.
  7. Transfer to a greased baking dish and top with additional cheese.
  8. Bake for 30-40 minutes or until golden brown and bubbly.
  9. If desired, broil for a few minutes for a crispy top.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can freeze for up to 2 months.
