A fun and tasty twist on classic cornbread, these waffle bites offer a crunchy exterior and soft, fluffy center, drizzled with honey butter syrup.
Ingredients
- 1 cup Cornmeal (medium grind)
- 1 cup All-Purpose Flour (gluten-free optional)
- 1 tbsp Baking Powder
- 1 tsp Salt
- 2 tbsp Sugar
- 2 large Eggs
- 1 cup Buttermilk
- 1/4 cup Butter (melted)
- 1 tsp Vanilla Extract
- 1/2 cup Honey
- 1/4 cup Softened Unsalted Butter
- 1/2 cup Jalapeños (chopped)
- 1/2 cup Corn Kernels
Instructions
- Preheat your waffle maker according to the manufacturer’s instructions.
- In a large bowl, mix the cornmeal, all-purpose flour, baking powder, salt, and sugar.
- In another bowl, whisk together the eggs, buttermilk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the jalapeños and corn kernels gently.
- Spray your waffle maker with cooking spray. Pour enough batter into the waffle maker to fill it about halfway.
- Close the lid and cook according to the waffle maker’s instructions until golden brown.
- Prepare the honey butter syrup by mixing the softened butter and honey together in a small bowl until smooth.
- Once the waffle bites are cooked, remove them and serve warm with the honey butter syrup drizzled on top.
Notes
For a savory twist, try adding shredded cheese or cooked bacon to the batter.
