Description

A fun and tasty twist on classic cornbread, these waffle bites offer a crunchy exterior and soft, fluffy center, drizzled with honey butter syrup.


Ingredients

  • 1 cup Cornmeal (medium grind)
  • 1 cup All-Purpose Flour (gluten-free optional)
  • 1 tbsp Baking Powder
  • 1 tsp Salt
  • 2 tbsp Sugar
  • 2 large Eggs
  • 1 cup Buttermilk
  • 1/4 cup Butter (melted)
  • 1 tsp Vanilla Extract
  • 1/2 cup Honey
  • 1/4 cup Softened Unsalted Butter
  • 1/2 cup Jalapeños (chopped)
  • 1/2 cup Corn Kernels


Instructions

  1. Preheat your waffle maker according to the manufacturer’s instructions.
  2. In a large bowl, mix the cornmeal, all-purpose flour, baking powder, salt, and sugar.
  3. In another bowl, whisk together the eggs, buttermilk, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the jalapeños and corn kernels gently.
  6. Spray your waffle maker with cooking spray. Pour enough batter into the waffle maker to fill it about halfway.
  7. Close the lid and cook according to the waffle maker’s instructions until golden brown.
  8. Prepare the honey butter syrup by mixing the softened butter and honey together in a small bowl until smooth.
  9. Once the waffle bites are cooked, remove them and serve warm with the honey butter syrup drizzled on top.

Notes
