Ingredients

  • 2 large potatoes, diced
  • 2 large parsnips, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh herbs for garnish (parsley or chives)


Instructions

  1. Sauté chopped onions and garlic in a pot until fragrant.
  2. Add diced potatoes and parsnips to the pot.
  3. Pour in vegetable broth and bring to a simmer.
  4. Cook until vegetables are tender, about 20-30 minutes.
  5. Blend the mixture until smooth, adding cream gradually.
  6. Season with salt and pepper to taste.

Notes

For a chunkier soup, reserve some diced parsnips and potatoes to add after blending. Consider adding a splash of white wine for depth of flavor.
