Ingredients
- 2 large potatoes, diced
- 2 large parsnips, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh herbs for garnish (parsley or chives)
Instructions
- Sauté chopped onions and garlic in a pot until fragrant.
- Add diced potatoes and parsnips to the pot.
- Pour in vegetable broth and bring to a simmer.
- Cook until vegetables are tender, about 20-30 minutes.
- Blend the mixture until smooth, adding cream gradually.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs.
Notes
For a chunkier soup, reserve some diced parsnips and potatoes to add after blending. Consider adding a splash of white wine for depth of flavor.
