Description

A comforting dish featuring tender poached chicken served over flavorful rice, perfect for family gatherings and special occasions.


Ingredients

  • 1 whole chicken (about 3-4 pounds)
  • 2 cups jasmine rice
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 4 scallions
  • 4 cups chicken broth
  • Salt, to taste
  • Cucumber slices, for garnish
  • Cilantro, for garnish
  • Soy sauce, for dipping
  • Chili sauce, for dipping


Instructions

  1. Sit the chicken at room temperature for 30 minutes.
  2. In a large pot, bring chicken broth to a gentle simmer with garlic, ginger, and scallions.
  3. Add the chicken and poach for about 30-40 minutes until fully cooked.
  4. Remove the chicken and let it cool before slicing.
  5. Use the broth to cook the jasmine rice in the same pot.
  6. Serve sliced chicken over rice, garnished with cucumber and cilantro.
  7. Offer dipping sauces on the side.

Notes

For gluten-free, use gluten-free soy sauce. You can also substitute chicken with firm tofu for a vegetarian version.
