Ingredients
- 1 whole chicken (about 3-4 pounds)
- 2 cups jasmine rice
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 4 scallions
- 4 cups chicken broth
- Salt, to taste
- Cucumber slices, for garnish
- Cilantro, for garnish
- Soy sauce, for dipping
- Chili sauce, for dipping
Instructions
- Sit the chicken at room temperature for 30 minutes.
- In a large pot, bring chicken broth to a gentle simmer with garlic, ginger, and scallions.
- Add the chicken and poach for about 30-40 minutes until fully cooked.
- Remove the chicken and let it cool before slicing.
- Use the broth to cook the jasmine rice in the same pot.
- Serve sliced chicken over rice, garnished with cucumber and cilantro.
- Offer dipping sauces on the side.
