Delicious and easy no-bake cookies made with pecans and coconut, perfect for any occasion.
Ingredients
- 1 cup pecans, chopped
- 1 cup shredded coconut
- 1 cup brown sugar
- 1/2 cup butter
- 1/4 cup milk
- 1 teaspoon vanilla extract
Instructions
- In a mixing bowl, combine chopped pecans and shredded coconut.
- In a saucepan, melt the butter and brown sugar together over low heat; stir until combined and smooth.
- Add the milk and vanilla extract to the saucepan and mix well.
- Pour the warm mixture over the dry ingredients and stir until everything is well coated.
- Using your hands, form the mixture into small cookie shapes and place on a silicone mat or parchment paper.
- Refrigerate for at least 30-60 minutes to allow the cookies to firm up.
Notes
Use fresh coconut for the best flavor. Chill the cookies longer if they don’t firm up initially.
