Ingredients
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 cup pumpkin puree
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp pumpkin spice mix
- 1/2 tsp salt
- 1 tsp vanilla extract
Instructions
- Cream together the butter, brown sugar, and granulated sugar in a mixing bowl until smooth.
- Add pumpkin puree and vanilla extract, mixing until fully combined.
- In a separate bowl, combine flour, baking powder, baking soda, pumpkin spice, and salt.
- Gradually mix the dry ingredients into the wet ingredients until a dough forms.
- Drop rounded tablespoons of dough onto a lined baking sheet.
- Bake in a preheated oven at 350°F (175°C) for 12-15 minutes or until edges are lightly golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
