Ingredients
- 1 lb fresh salmon, cut into chunks
- 2 medium potatoes, peeled and diced
- 1 cup corn (fresh or frozen)
- 2 stalks celery, diced
- 1 medium onion, diced
- 3 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh dill or parsley for garnish
Instructions
- In a large pot, melt butter over medium heat. Add onions and celery, sauté until soft.
- Add diced potatoes and broth, bring to a boil. Simmer until potatoes are tender.
- Stir in corn and salmon, cook until salmon is just cooked through.
- Gradually add cream, stirring gently to combine. Season with salt and pepper.
- Serve warm, garnished with fresh dill or parsley.
