Description

Delicious thumbprint cookies with a buttery, strawberry flavor and a chocolate kiss center, perfect for summer or Valentine’s Day.


Ingredients

  • 1 cup (227 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups (280 g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3–4 tablespoons freeze-dried strawberry powder (or 1–2 tablespoons pureed strawberries)
  • Chocolate kisses or strawberry-filled candy


Instructions

  1. Cream the butter and sugar together until light and fluffy, about 3–4 minutes with a stand mixer.
  2. Beat in the egg and vanilla extract.
  3. Fold in the flour, baking powder, and salt.
  4. Stir in the strawberry powder or puree.
  5. Scoop 1-tablespoon portions and roll into balls, spacing them 2 inches apart on a baking sheet.
  6. Chill the dough for 15-30 minutes for best results.
  7. Bake at 350°F (175°C) for 9–11 minutes until edges are set but centers are soft.
  8. Press a chocolate kiss or a strawberry-filled candy into each warm cookie well immediately after removing from the oven.

Notes

Chilling the dough helps control spread and keeps thumbprints neat. Use freeze-dried strawberry powder for vibrant color and flavor.
