Description

Ingredients

  • 2 cups finely chopped mushrooms (cremini and shiitake)
  • 1 cup chopped walnuts
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 2 tablespoons fresh thyme
  • 2 tablespoons fresh rosemary
  • 1 package vegan puff pastry
  • Almond milk, for brushing
  • Salt and pepper, to taste


Instructions

  1. Sauté mushrooms, onions, and garlic in a dry pan until most moisture is evaporated.
  2. Mix in chopped walnuts, breadcrumbs, herbs, salt, and pepper until well combined.
  3. Let the filling cool before wrapping.
  4. Lay the filling onto a sheet of puff pastry, rolling it carefully into a log shape.
  5. Brush the pastry with almond milk for a golden finish.
  6. Bake in a preheated oven at 400°F (200°C) for 40-45 minutes until golden brown and flaky.
