Ingredients
- 2 cups finely chopped mushrooms (cremini and shiitake)
- 1 cup chopped walnuts
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 2 tablespoons fresh thyme
- 2 tablespoons fresh rosemary
- 1 package vegan puff pastry
- Almond milk, for brushing
- Salt and pepper, to taste
Instructions
- Sauté mushrooms, onions, and garlic in a dry pan until most moisture is evaporated.
- Mix in chopped walnuts, breadcrumbs, herbs, salt, and pepper until well combined.
- Let the filling cool before wrapping.
- Lay the filling onto a sheet of puff pastry, rolling it carefully into a log shape.
- Brush the pastry with almond milk for a golden finish.
- Bake in a preheated oven at 400°F (200°C) for 40-45 minutes until golden brown and flaky.
