Description

A delightful dish that combines tender salmon and vibrant spinach in a creamy sauce, perfect for busy weeknights or entertaining guests.


Ingredients

  • 8 oz fettuccine or penne pasta
  • 2 tablespoons butter
  • 1 lb salmon fillet, skin removed and diced
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh Parmesan cheese for serving
  • 1 lemon, for squeezing


Instructions

  1. Boil water in a large pot and cook pasta al dente according to package instructions.
  2. In a large skillet, melt butter over medium heat. Add diced salmon and cook until lightly browned on all sides.
  3. Add minced garlic and spinach to the skillet and sauté until spinach wilts.
  4. Stir in the heavy cream and paprika, and season with salt and pepper. Allow to simmer for a few minutes.
  5. Reserve 1 cup of pasta cooking water, then drain the pasta.
  6. Add the drained pasta to the skillet, mixing everything together. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
  7. Serve in bowls, topped with freshly grated Parmesan and a squeeze of lemon.

Notes

Use fresh spinach and quality salmon for the best flavor. Adjust seasoning to your taste.
