A delightful dish that combines tender salmon and vibrant spinach in a creamy sauce, perfect for busy weeknights or entertaining guests.
Ingredients
- 8 oz fettuccine or penne pasta
- 2 tablespoons butter
- 1 lb salmon fillet, skin removed and diced
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh Parmesan cheese for serving
- 1 lemon, for squeezing
Instructions
- Boil water in a large pot and cook pasta al dente according to package instructions.
- In a large skillet, melt butter over medium heat. Add diced salmon and cook until lightly browned on all sides.
- Add minced garlic and spinach to the skillet and sauté until spinach wilts.
- Stir in the heavy cream and paprika, and season with salt and pepper. Allow to simmer for a few minutes.
- Reserve 1 cup of pasta cooking water, then drain the pasta.
- Add the drained pasta to the skillet, mixing everything together. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
- Serve in bowls, topped with freshly grated Parmesan and a squeeze of lemon.
Notes
Use fresh spinach and quality salmon for the best flavor. Adjust seasoning to your taste.
