Description

Crunchy, savory snack with a bold cheddar flavor and a touch of southern sass.


Ingredients

  • 2 cups (250 g) all-purpose flour
  • 1/2 tsp kosher salt
  • 1 tsp dry mustard powder
  • 1/2 tsp smoked paprika (plus a pinch extra if desired)
  • 1/4 tsp cayenne pepper (optional)
  • 1/2 cup (113 g) unsalted butter, cold, cut into cubes
  • 8 oz (225 g) sharp cheddar, finely grated and kept cold (about 2 cups)
  • 3–4 tbsp ice water
  • 1 egg beaten with 1 tbsp water for egg wash (optional)


Instructions

  1. Pulse flour, salt, spices, cold butter, and grated cheddar in a food processor to make a coarse dough.
  2. Add ice water gradually until dough comes together.
  3. Chill the dough for 30–60 minutes.
  4. Roll the chilled dough to about 1/8-inch thickness.
  5. Cut into 1-inch squares and dock to prevent puffing.
  6. Bake at 375°F (190°C) for 12-14 minutes until golden.
  7. Let rest on baking sheet for carryover cooking before transferring to a cooling rack.

Notes

For best results, keep ingredients cold and ensure uniform thickness while rolling.
