Ingredients
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 3 cups old-fashioned rolled oats
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup butterscotch chips
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Incorporate the eggs and vanilla extract, mixing until combined.
- In a separate bowl, whisk together the flour, oats, baking soda, and salt.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Fold in the butterscotch chips.
- Scoop dough onto a prepared baking sheet.
- Bake in the preheated oven for 12-15 minutes, or until golden and slightly underbaked.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Chilling the dough for about 30 minutes helps enhance flavors and prevents spreading while baking.
