Description

Chewy cookies made with oats and sweet butterscotch chips, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 3 cups old-fashioned rolled oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butterscotch chips


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Incorporate the eggs and vanilla extract, mixing until combined.
  4. In a separate bowl, whisk together the flour, oats, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Fold in the butterscotch chips.
  7. Scoop dough onto a prepared baking sheet.
  8. Bake in the preheated oven for 12-15 minutes, or until golden and slightly underbaked.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes
