Description

A creamy, cheesy dish that satisfies cravings for comfort food while incorporating more vegetables into your meals. Perfect for busy weeknight dinners!


Ingredients

  • 1 tablespoon butter
  • 1 head cauliflower, riced or 12 oz bag frozen riced cauliflower
  • 1/2 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 1 cup shredded cheddar cheese
  • 2 tablespoons heavy cream
  • 1/4 cup grated Parmesan cheese
  • Optional: Chopped parsley, for garnish


Instructions

  1. If using a whole head of cauliflower, pulse the florets in a food processor until they are rice-sized. If using pre-riced cauliflower, skip this step.
  2. Melt the butter in a large skillet over medium heat.
  3. Add the riced cauliflower to the skillet. Sauté for about 5–7 minutes, stirring occasionally, until the cauliflower is tender and most moisture has evaporated.
  4. Stir in garlic powder, salt, and pepper to season the cauliflower.
  5. Reduce the heat to low, then add the cheddar cheese, heavy cream, and Parmesan cheese. Stir until everything is melted and creamy.
  6. Remove from heat, garnish with parsley if desired, and serve warm.

Notes

For added texture, consider including cooked bacon or sautéed onions. Adjust heaviness of cream as desired.
