Ingredients
- 1 pound carrots, peeled and cut into 1-2 inch pieces
 - 2 tablespoons olive oil
 - 1/2 cup grated Parmesan cheese
 - Salt and pepper to taste
 
Instructions
- Preheat oven to 425°F (220°C).
 - Boil carrots in salted water until tender, about 15 minutes.
 - Drain the carrots and spread them on a baking sheet.
 - Gently smash each carrot with a fork or the bottom of a glass.
 - Drizzle with olive oil and sprinkle with Parmesan, salt, and pepper.
 - Roast in the oven for 20 minutes, or until golden brown and crispy.
 
Notes
For a vegan option, replace Parmesan with nutritional yeast. Ensure carrots are dried after boiling for maximum crispiness.
