Ingredients
- 1 pound of carrots, peeled
- 2 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- Salt, to taste

Instructions
- Boil the carrots in salted water until tender.
- Drain and gently smash each carrot with a fork or the bottom of a glass.
- Toss the smashed carrots with olive oil, salt, and Parmesan cheese.
- Spread evenly on a baking sheet.
- Bake in a preheated oven at 400°F (200°C) until crispy and golden, about 20 minutes.
