Ingredients

  • 6 large Eggs
  • 1 pound Breakfast Sausage
  • 1 can Black Beans (drained and rinsed)
  • 1 cup Bell Peppers
  • 1 medium Onion
  • 1 cup Cheddar Cheese (optional)
  • 6 large Flour Tortillas
  • 1 medium Avocado
  • 1 cup Salsa


Instructions

  1. In a large skillet, cook the breakfast sausage over medium heat until browned. Remove from skillet and set aside.
  2. In the same skillet, add chopped onions and bell peppers. Sauté until softened.
  3. Whisk the eggs in a bowl, then pour them into the skillet with the veggies. Cook until scrambled and fully cooked.
  4. Stir in the black beans and cooked sausage. Mix until heated through.
  5. Remove from heat and add the cheddar cheese, stirring until melted.
  6. Lay out the tortillas and spoon a generous portion of the mixture onto each tortilla.
  7. Top with avocado and salsa, then roll up the tortillas tightly.
  8. Wrap each burrito in plastic wrap and place them in a freezer bag. Freeze until ready to use.
