Ingredients
- 6 large Eggs
- 1 pound Breakfast Sausage
- 1 can Black Beans (drained and rinsed)
- 1 cup Bell Peppers
- 1 medium Onion
- 1 cup Cheddar Cheese (optional)
- 6 large Flour Tortillas
- 1 medium Avocado
- 1 cup Salsa
Instructions
- In a large skillet, cook the breakfast sausage over medium heat until browned. Remove from skillet and set aside.
- In the same skillet, add chopped onions and bell peppers. Sauté until softened.
- Whisk the eggs in a bowl, then pour them into the skillet with the veggies. Cook until scrambled and fully cooked.
- Stir in the black beans and cooked sausage. Mix until heated through.
- Remove from heat and add the cheddar cheese, stirring until melted.
- Lay out the tortillas and spoon a generous portion of the mixture onto each tortilla.
- Top with avocado and salsa, then roll up the tortillas tightly.
- Wrap each burrito in plastic wrap and place them in a freezer bag. Freeze until ready to use.
