Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1/2 cup olive oil
  • 2 large eggs
  • 1 cup crumbled cheese (sharp cheddar or feta)
  • 1/2 cup chopped pitted olives (Kalamata preferred)


Instructions

  1. Preheat your oven to 375°F (190°C) and line a loaf pan with parchment paper.
  2. In a bowl, mix together the dry ingredients: flour, baking powder, and salt.
  3. In another bowl, whisk together the wet ingredients: milk, olive oil, and eggs.
  4. Combine the dry and wet mixtures until just combined; do not overmix.
  5. Fold in the crumbled cheese and chopped olives.
  6. Pour the mixture into the prepared pan and bake for 45 minutes or until golden brown.
  7. Check for doneness with a toothpick; it should come out clean.
