Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1 cup sour cream
- 1 cup whipped cream
- 1 cup fresh strawberries, halved
- ¾ cup sugar
- 3 large eggs, at room temperature
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 325°F (165°C).
- In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
- In a large mixing bowl, beat cream cheese, sugar, and vanilla until smooth.
- Add in sour cream and mix well, then add eggs one at a time, mixing on low speed.
- Pour the batter over the crust in the springform pan.
- Bake for 25 minutes, then turn off the oven and crack the door open to let it cool gradually.
- Allow the cheesecake to chill in the fridge for at least 4 hours or overnight.
- Top with fresh strawberries before serving.

For optimal flavor, chill overnight. This cheesecake can be made gluten-free using gluten-free crackers.
