Description

A delightful cheesecake that combines creamy textures with a crunchy strawberry topping, perfect for any occasion.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sour cream
  • 1 cup whipped cream
  • 1 cup fresh strawberries, halved
  • ¾ cup sugar
  • 3 large eggs, at room temperature
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese, sugar, and vanilla until smooth.
  4. Add in sour cream and mix well, then add eggs one at a time, mixing on low speed.
  5. Pour the batter over the crust in the springform pan.
  6. Bake for 25 minutes, then turn off the oven and crack the door open to let it cool gradually.
  7. Allow the cheesecake to chill in the fridge for at least 4 hours or overnight.
  8. Top with fresh strawberries before serving.

Notes

For optimal flavor, chill overnight. This cheesecake can be made gluten-free using gluten-free crackers.
