Ingredients
- 2 medium sweet potatoes
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 2 tablespoons lime juice
- 2 tablespoons honey
- Fresh veggies (e.g., broccoli, bell peppers, carrots)
- Chopped cilantro for garnish
- Sliced green onions for garnish
- Crushed peanuts for garnish
Instructions
- Preheat oven to 425°F (220°C).
- Cube the sweet potatoes, toss with olive oil, salt, and pepper, and roast for about 25 minutes or until crispy.
- While the sweet potatoes are roasting, make the peanut sauce by combining peanut butter, soy sauce, lime juice, and honey in a bowl.
- Mix well until smooth, adjusting with warm water or lime juice if too thick.
- Once sweet potatoes are done, combine them in a bowl with fresh veggies and pour the peanut sauce over.
- Garnish with cilantro, green onions, and crushed peanuts before serving.
Notes
For a vegan option, substitute honey with maple syrup. This bowl is perfect for meal prepping.
