A colorful and nutrient-rich Buddha bowl featuring sweet potatoes, fresh veggies, and a creamy Thai peanut sauce.


Ingredients

  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons lime juice
  • 2 tablespoons honey
  • Fresh veggies (e.g., broccoli, bell peppers, carrots)
  • Chopped cilantro for garnish
  • Sliced green onions for garnish
  • Crushed peanuts for garnish


Instructions

  1. Preheat oven to 425°F (220°C).
  2. Cube the sweet potatoes, toss with olive oil, salt, and pepper, and roast for about 25 minutes or until crispy.
  3. While the sweet potatoes are roasting, make the peanut sauce by combining peanut butter, soy sauce, lime juice, and honey in a bowl.
  4. Mix well until smooth, adjusting with warm water or lime juice if too thick.
  5. Once sweet potatoes are done, combine them in a bowl with fresh veggies and pour the peanut sauce over.
  6. Garnish with cilantro, green onions, and crushed peanuts before serving.

Notes

For a vegan option, substitute honey with maple syrup. This bowl is perfect for meal prepping.
