A delicious meal featuring juicy chicken cutlets, fresh basil, and rich cheese, perfect for family dinners or entertaining guests.
Ingredients
- 4 pieces Chicken Breasts (pounded to 1/4″ thickness)
- 1 cup Flour (for dredging)
- 2 large Eggs (beaten)
- 1 cup Italian Seasoned Breadcrumbs (or unseasoned with Italian herbs)
- 1 cup Cherry Tomatoes (diced)
- 8 ounces Fresh Mozzarella (or burrata or feta)
- 1 small Red Onion (diced)
- 1 cup Basil (fresh preferred)
- 2 tablespoons Extra Virgin Olive Oil (for dressing and frying)
- 1/4 cup Pecorino Romano (or Parmesan)
Instructions
- Pound the chicken breasts to an even thickness of 1/4 inch using a meat mallet or rolling pin.
- Set up three shallow dishes: flour, beaten eggs, and breadcrumbs.
- Coat each chicken breast in flour, then dip it in beaten eggs, and cover it with breadcrumbs.
- Heat olive oil in a large skillet over medium heat. Add the breaded chicken cutlets and cook for 4-5 minutes on each side until golden brown and cooked through.
- Remove chicken from skillet. In the same skillet, add diced red onion and cherry tomatoes. Cook for 2-3 minutes until slightly softened.
- Place chicken cutlets on a serving plate, top with cooked tomatoes and onions, and add pieces of fresh mozzarella. Sprinkle chopped basil and grated cheese on top.
- Serve immediately and enjoy!

For serving, pair with a simple green salad, pasta, or crusty bread. Drizzle with extra virgin olive oil and garnish with fresh basil.
