Description

A quick and flavorful dish combining salmon with a sweet and tangy mango teriyaki glaze.


Ingredients

  • 2 salmon fillets
  • 1 ripe mango, peeled and diced
  • 1/4 cup teriyaki sauce
  • 2 spring onions (optional), chopped
  • 2 tbsp cooking oil (sesame oil recommended)


Instructions

  1. Dice the ripe mango. Blend or finely chop for a smooth glaze.
  2. Combine mango with teriyaki sauce to create the glaze.
  3. Heat oil in a pan over medium-high heat. Place salmon fillets skin-side down and cook for 4-5 minutes until the skin is crispy.
  4. Flip the salmon and cook for another 4-5 minutes until flaky.
  5. Spoon the mango teriyaki glaze over the salmon in the last 2-3 minutes of cooking.
  6. Remove from heat, sprinkle with spring onions, and serve immediately.

Notes

Serve on rice or with steamed vegetables. Store leftovers in an airtight container for up to two days.
