Ingredients
- 3 ripe bananas, mashed
- 2 large eggs
- 3/4 cup brown sugar
- 1/2 cup melted butter (or neutral oil)
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup toasted walnuts, chopped
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a bowl, mash the ripe bananas, then whisk in the eggs, brown sugar, melted butter, and vanilla.
- In a separate bowl, mix the flour, baking soda, and salt.
- Gently fold the dry ingredients into the wet mixture until just combined; add the toasted walnuts and fold to incorporate.
- Pour the batter into the prepared loaf pan and bake for 55-65 minutes, or until a skewer inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For best results, use very ripe bananas. Toast walnuts beforehand for extra flavor.
