A delightful twist on classic upside-down cakes with caramelized bananas and a fluffy cake.
Ingredients
- 4 ripe bananas, sliced
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In an oven-safe skillet, melt butter over medium heat and stir in brown sugar until dissolved.
- Layer sliced bananas over the caramel in the skillet.
- In a bowl, mix flour, baking powder, baking soda, and salt.
- In another bowl, beat granulated sugar, eggs, milk, and vanilla extract until combined.
- Gradually mix in the dry ingredients into the wet ingredients until just combined.
- Pour the batter over the banana layer in the skillet.
- Bake for 40 minutes or until a toothpick comes out clean.
- Let the cake cool for 10 minutes before inverting onto a plate.
Notes
Use overly ripe bananas for the best sweetness. Store in an airtight container at room temperature for up to 3 days.
