Description

A delicious and healthy twist on a classic comfort food, this Chicken Meatloaf is light and moist, perfect for the whole family.


Ingredients

  • 1 lb (450g) ground chicken
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • ½ cup (50g) breadcrumbs
  • ¼ cup (60ml) milk
  • 2 tablespoons barbecue sauce, plus more for topping
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)


Instructions

  1. Set your oven to 375°F (190°C). Grease or line a loaf pan with parchment paper.
  2. (Optional) For extra flavor, cook the chopped onion and minced garlic in a pan until softened.
  3. In a bowl, combine the ground chicken, onion, garlic, egg, breadcrumbs, milk, barbecue sauce, Worcestershire sauce, paprika, salt, and pepper. Mix gently — be careful not to overwork the mixture.
  4. Form the mixture into a loaf shape in the prepared pan. Spread some extra barbecue sauce over the top.
  5. Bake in the oven for 45–55 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Let the meatloaf rest for 10 minutes before slicing. If you want, garnish with fresh parsley.

Notes

Make sure not to overmix the meatloaf mixture to keep it tender. Consider adding grated carrots or zucchini for added moisture.
