A vibrant salad featuring grilled chicken, sweet mandarin oranges, and crunchy greens, perfect for any occasion.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup mandarin orange segments
- 4 cups mixed greens (spinach, romaine, or arugula)
- 1/4 cup sliced almonds (optional)
- 1/4 cup olive oil
- 2 tablespoons soy sauce
- 1 clove garlic, minced
- 2 tablespoons vinegar (apple cider or white)
- 1 tablespoon honey
- 1/4 cup orange juice
Instructions
- Marinate the chicken with olive oil, soy sauce, and minced garlic for at least 15 minutes.
- Preheat the grill to medium-high heat and grill the chicken for about 10 minutes, or until cooked through.
- While the chicken is grilling, chop your greens and place them in a large bowl.
- Toss the greens with mandarin segments and sliced almonds (if using).
- In a separate bowl, mix together olive oil, vinegar, honey, and orange juice to create the dressing.
- Once the chicken is grilled, slice it and add it warm to the salad.
- Drizzle the dressing over the salad, toss gently, and serve immediately.
Notes
Serve with toasted baguette slices or crispy spring rolls for added texture. It’s best enjoyed fresh, but leftovers can be stored for up to three days.
