Ingredients
- 1 lb chicken breast, cut into pieces
- 1 can (14 oz) coconut milk
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 1 tsp chili flakes (adjust to taste)
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Jasmine rice or quinoa, for serving
Instructions
- Heat a skillet over medium-high heat and add a little oil.
- Season chicken pieces with salt, pepper, and chili flakes.
- Sauté chicken in the skillet until golden brown and cooked through, about 5-7 minutes.
- Add minced garlic and ginger, stir for another minute.
- Pour in the coconut milk, and let the mixture simmer for 10-15 minutes until sauce thickens slightly.
- Serve over jasmine rice or quinoa, and garnish with fresh cilantro.
