Description

Ingredients

  • 1 lb chicken breast, cut into pieces
  • 1 can (14 oz) coconut milk
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 tsp chili flakes (adjust to taste)
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Jasmine rice or quinoa, for serving


Instructions

  1. Heat a skillet over medium-high heat and add a little oil.
  2. Season chicken pieces with salt, pepper, and chili flakes.
  3. Sauté chicken in the skillet until golden brown and cooked through, about 5-7 minutes.
  4. Add minced garlic and ginger, stir for another minute.
  5. Pour in the coconut milk, and let the mixture simmer for 10-15 minutes until sauce thickens slightly.
  6. Serve over jasmine rice or quinoa, and garnish with fresh cilantro.
