A delightful twist on traditional sushi, featuring spicy, creamy shrimp and fresh vegetables.
Ingredients
- 1 pound shrimp
- 1/2 cup spicy mayo
- 2 cups sushi rice
- 2 ripe avocados
- 1 cucumber
- 1 cup assorted vegetables (optional)
- 2 tablespoons sesame seeds (optional)
Instructions
- Cook sushi rice according to package instructions, then season with rice vinegar, sugar, and salt. Allow to cool.
- Boil or sauté shrimp until opaque, about 3-5 minutes, then let cool.
- Mix mayonnaise with sriracha to create spicy mayo. Coat cooled shrimp in the mixture.
- Thinly slice cucumber and prepare avocado just before assembly.
- In a mold, layer sushi rice, cucumber, avocado, and spicy shrimp, pressing down lightly.
- Garnish with extra spicy mayo and sesame seeds, if desired.
- Serve immediately for the best taste and texture.
Notes
Use fresh shrimp and adjust sriracha in spicy mayo to taste. For variations, try crab or tofu.
