- 1 avocado, sliced
- 1 cup sushi rice

- 1/2 tsp salt
- 2 tbsp mayonnaise
- 1 tbsp Sriracha (adjust to taste)
- 1 cucumber, thinly sliced
- 1 carrot, julienned
- Sesame seeds, for garnish
- Soy sauce, for serving
- Pickled ginger, for serving
- Wasabi, for serving
Instructions
- Cook sushi rice according to package instructions. Mix rice vinegar, sugar, and salt, and fold into the rice once cooked.
- In a pan, quickly sauté the shrimp until pink and opaque.
- Prepare spicy mayo by mixing mayonnaise and Sriracha.
- In a ring mold, layer the sushi rice, shrimp, avocado, cucumber, and carrot, gently pressing as you go.
- Carefully remove the mold to reveal the layered stack.
- Drizzle with additional spicy mayo and sprinkle sesame seeds on top.
- Serve with soy sauce, pickled ginger, and wasabi.
