Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 avocado, sliced
  • 1 cup sushi rice
  • 2 tbsp rice vinegar
  • 1 tsp sugar
  • 1/2 tsp salt
  • 2 tbsp mayonnaise
  • 1 tbsp Sriracha (adjust to taste)
  • 1 cucumber, thinly sliced
  • 1 carrot, julienned
  • Sesame seeds, for garnish
  • Soy sauce, for serving
  • Pickled ginger, for serving
  • Wasabi, for serving


Instructions

  1. Cook sushi rice according to package instructions. Mix rice vinegar, sugar, and salt, and fold into the rice once cooked.
  2. In a pan, quickly sauté the shrimp until pink and opaque.
  3. Prepare spicy mayo by mixing mayonnaise and Sriracha.
  4. In a ring mold, layer the sushi rice, shrimp, avocado, cucumber, and carrot, gently pressing as you go.
  5. Carefully remove the mold to reveal the layered stack.
  6. Drizzle with additional spicy mayo and sprinkle sesame seeds on top.
  7. Serve with soy sauce, pickled ginger, and wasabi.
