Description
Buttery, tender cookies with a nostalgic jam center that are quick to mix and bake, perfect for holidays and kid-friendly fun.
Ingredients
- 1 cup (226 g) unsalted butter
- 2/3 cup (135 g) granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 2 cups (240 g) all-purpose flour
- 1/4–1/2 teaspoon salt
- Jam (of your choice) for filling
- Granulated or coarse sugar for rolling (optional)
Instructions
- Cream butter and sugar together until light and fluffy (about 2–3 minutes).
- Beat in egg yolk and vanilla extract.
- Fold in flour and salt until just combined.
- Chill the dough for 30–45 minutes.
- Scoop 1-inch balls of dough and roll in sugar if desired.
- Press a thumb or measuring spoon into each ball to make a well.
- Fill each indentation with approximately 1/2 teaspoon of jam.
- Bake at 350°F (175°C) for 12–14 minutes until the edges are set.
- Cool on the pan for 5 minutes, then transfer to a rack.
Notes
Chilling the dough helps prevent spreading and keeps the cookies plump. Use thicker preserves for better results.
