Description

Buttery, tender cookies with a nostalgic jam center that are quick to mix and bake, perfect for holidays and kid-friendly fun.


Ingredients

  • 1 cup (226 g) unsalted butter
  • 2/3 cup (135 g) granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 cups (240 g) all-purpose flour
  • 1/4–1/2 teaspoon salt
  • Jam (of your choice) for filling
  • Granulated or coarse sugar for rolling (optional)


Instructions

  1. Cream butter and sugar together until light and fluffy (about 2–3 minutes).
  2. Beat in egg yolk and vanilla extract.
  3. Fold in flour and salt until just combined.
  4. Chill the dough for 30–45 minutes.
  5. Scoop 1-inch balls of dough and roll in sugar if desired.
  6. Press a thumb or measuring spoon into each ball to make a well.
  7. Fill each indentation with approximately 1/2 teaspoon of jam.
  8. Bake at 350°F (175°C) for 12–14 minutes until the edges are set.
  9. Cool on the pan for 5 minutes, then transfer to a rack.

Notes

Chilling the dough helps prevent spreading and keeps the cookies plump. Use thicker preserves for better results.
