Description

A vibrant and nutritious Italian Chopped Salad featuring crunchy vegetables, salty cheeses, and a zesty red-wine vinaigrette, perfect for a light meal or side dish.


Ingredients

  • 1 head romaine lettuce, chopped
  • 1 head radicchio, chopped
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, quartered
  • 1/2 small red onion, thinly sliced
  • 1/2 cup salami or olives, chopped (optional)
  • 1/2 cup mozzarella cheese, shredded or cubed
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • Fresh basil leaves for garnish


Instructions

  1. Wash and dry all produce.
  2. Chop romaine and radicchio into 1/2-inch pieces.
  3. Dice cucumber and bell pepper into small cubes.
  4. Quarter cherry tomatoes (or seed and cube large tomatoes).
  5. Thinly slice red onion.
  6. Roughly chop salami or olives if using.
  7. For the dressing, whisk together red wine vinegar, Dijon mustard, minced garlic, kosher salt, and black pepper.
  8. Slowly add olive oil while whisking until emulsified.
  9. Toss greens and vegetables lightly with 2-3 tablespoons of the dressing.
  10. Sprinkle with mozzarella, Parmesan, and fresh basil before serving.

Notes

For best texture, toss the salad with dressing just before serving. Keep the dressing separate if making ahead.
