Ingredients
- 1 head romaine lettuce, chopped
- 1 cup cherry tomatoes, diced
- 1 cucumber, diced
- 1/2 red onion, diced
- 4 oz salami, diced
- 4 oz provolone cheese, diced
- 1/3 cup extra-virgin olive oil
- 3 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 small clove garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Chop all ingredients into uniform 1/4-inch dice.
- Whisk together olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper until emulsified.
- Toss the chopped salad with the dressing in a large bowl.
- Refrigerate for 15–30 minutes to let flavors meld.
- Give a final toss and adjust seasoning before serving.
