Description

A vibrant salad that delivers bold deli flavors in a healthy, no-cook format with cured meats, cheese, and fresh vegetables.


Ingredients

  • 3 cups chopped romaine lettuce
  • 1 cup diced salami
  • 1 cup diced pepperoni
  • 1 cup cubed provolone cheese
  • 1/2 cup diced cherry tomatoes
  • 1/2 cup sliced black olives
  • 1/2 cup diced red onion
  • 1/4 cup chopped parsley
  • 3 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 3/4 cup extra-virgin olive oil


Instructions

  1. Chop all ingredients into a uniform 1/4-inch dice.
  2. Whisk together the vinegar, mustard, salt, pepper, and olive oil to make the vinaigrette.
  3. Toss the chopped ingredients with the vinaigrette in a large mixing bowl.
  4. Let the salad rest in the refrigerator for 30–60 minutes to enhance the flavors.
  5. Serve as a side or main dish, garnished with additional cheese and herbs if desired.
