Description

A hearty Italian sausage soup filled with savory flavors, fresh vegetables, and fragrant herbs, perfect for chilly days.


Ingredients

  • 1 lb Italian sausage
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups broth (chicken or vegetable)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Parmesan cheese for serving (optional)


Instructions

  1. In a large pot, brown the Italian sausage over medium heat until fully cooked.
  2. Add the diced onion, garlic, and bell pepper, and sauté until the vegetables are tender.
  3. Pour in the diced tomatoes and broth, bring to a boil.
  4. Stir in the dried herbs, season with salt and pepper, and reduce to a simmer.
