Description

A bright, refreshing drink combining lemon, lavender, and coconut flavors, perfect for warm days.


Ingredients

  • 1 cup freshly squeezed lemon juice (from about 4-6 fresh lemons)
  • 1/2 cup lavender syrup (homemade or store-bought)
  • 2 cups coconut water
  • 2 cups cold water or sparkling water (to taste)
  • Sweetener (optional): honey, agave syrup, or simple syrup, amount to taste
  • Ice cubes, as needed
  • 1 cup water
  • 1 cup granulated sugar
  • 2 tablespoons dried culinary lavender buds


Instructions

  1. In a saucepan, combine 1 cup of water, 1 cup of granulated sugar, and 2 tablespoons of dried culinary lavender. Simmer gently while stirring until the sugar dissolves and the lavender flavors the syrup. Strain out the lavender buds and let the syrup cool.
  2. Roll the lemons on the counter to soften them, then cut them in half and squeeze out the juice until you have about one cup. Strain the juice to remove any seeds and pulp.
  3. In a large pitcher, mix the freshly squeezed lemon juice with 2 cups of coconut water. Stir well to blend the flavors.
  4. Pour in the cooled lavender syrup and stir thoroughly. Taste your lemonade, and if you want it sweeter, add more syrup or your chosen sweetener.
  5. Add ice cubes to the pitcher or to individual glasses. Top off with cold water or sparkling water to your desired level and stir gently before serving.

Notes

For a beautiful look, use clear glasses to show off the drink’s color. If you don’t have lavender syrup, you can quickly make it at home using dried lavender and sugar. Adjust sweetness to your liking.
