Ingredients
- 2 cups leftover mashed potatoes
- 1 cup shredded cheese (mix of cheddar and mozzarella)
- 2 large eggs
- 1/2 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Parchment paper (for baking)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the chilled leftover mashed potatoes, shredded cheese, eggs, garlic powder, onion powder, and season with salt and pepper.
- Gradually fold in the flour until just combined. Avoid overmixing to keep the mixture airy.
- Using a cookie scoop or spoon, drop portions of the batter onto the prepared baking sheet.
- Bake in the preheated oven for 20 minutes, or until golden brown and crispy on the outside.
- Remove from the oven and serve warm, optionally garnished with fresh herbs.
Notes
These puffs can be made ahead of time and frozen before baking for a quick snack later.
