Description

Crispy, cheesy delights made from leftover mashed potatoes, perfect as snacks or appetizers.


Ingredients

  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheese (mix of cheddar and mozzarella)
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Parchment paper (for baking)


Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the chilled leftover mashed potatoes, shredded cheese, eggs, garlic powder, onion powder, and season with salt and pepper.
  3. Gradually fold in the flour until just combined. Avoid overmixing to keep the mixture airy.
  4. Using a cookie scoop or spoon, drop portions of the batter onto the prepared baking sheet.
  5. Bake in the preheated oven for 20 minutes, or until golden brown and crispy on the outside.
  6. Remove from the oven and serve warm, optionally garnished with fresh herbs.

Notes

These puffs can be made ahead of time and frozen before baking for a quick snack later.
