Ingredients
- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/4 cup butter, softened
- 1 egg yolk
- 1/4 tsp salt
- 1/2 cup lemon juice
- 1 cup sugar
- 3 eggs
- 2 egg whites
- 1/2 tsp cream of tartar
- Oil for frying
- Powdered sugar for dusting
Instructions
- Combine flour, powdered sugar, butter, egg yolk, and salt to form a dough.
- Chill the dough for 30 minutes.
- Roll out the dough and cut into circles.
- Fry shells in hot oil until golden brown, then cool.
- Prepare lemon curd by cooking lemon juice, sugar, and eggs until thickened.
- Make meringue by whipping egg whites with sugar and cream of tartar until stiff peaks form.
- Fill cooled shells with lemon curd and pipe meringue on top.
- Dust with powdered sugar and serve.
