Ingredients
- 4 bone-in, skin-on chicken thighs
- 2 pounds baby potatoes, halved
- 1/4 cup olive oil
- 2 tablespoons fresh rosemary, chopped
- Juice of 1 lemon
- 4 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine olive oil, rosemary, lemon juice, garlic, salt, and pepper.
- Add chicken thighs and potatoes; toss to coat.
- Arrange the chicken skin side up on a baking sheet with the potatoes.
- Roast for 45 minutes or until chicken is cooked through and potatoes are golden.
- Let the chicken rest for a few minutes before serving.
Notes
