Description

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 pounds baby potatoes, halved
  • 1/4 cup olive oil
  • 2 tablespoons fresh rosemary, chopped
  • Juice of 1 lemon
  • 4 cloves garlic, minced
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine olive oil, rosemary, lemon juice, garlic, salt, and pepper.
  3. Add chicken thighs and potatoes; toss to coat.
  4. Arrange the chicken skin side up on a baking sheet with the potatoes.
  5. Roast for 45 minutes or until chicken is cooked through and potatoes are golden.
  6. Let the chicken rest for a few minutes before serving.
