Delicious no-bake cheesecake balls made with peanut butter, perfect for satisfying your sweet tooth without the guilt.
Ingredients
- 8 oz reduced-fat cream cheese
- ¾ cup natural creamy peanut butter
- ¼ cup honey or maple syrup
- 1 tsp vanilla extract
- 1 cup crushed whole-grain graham crackers
- ½ cup dark chocolate chips, melted (optional)
- 2 tbsp chopped peanuts or flaxseed (optional)
Instructions
- Blend cream cheese and peanut butter together until smooth.
- Stir in the honey and vanilla extract.
- Fold in the crushed graham cracker crumbs.
- Roll the mixture into 1-inch balls and place them on a parchment-lined tray.
- If desired, dip the balls in melted chocolate or roll them in chopped nuts or seeds.
- Chill in the refrigerator for 1 hour until firm.
- Enjoy right away or store them for later!
Notes
Use room temperature cream cheese for easier blending. Adjust sweetness to taste, and consider adding a sprinkle of sea salt on top of the chocolate dip for an extra flavor boost.
