Description

A Moist, Citrusy Italian-Inspired Dessert combining creamy ricotta with the bright acidity of lemons.


Ingredients

  • 1 ½ cups ricotta cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • ¼ cup Limoncello
  • Zest of 2 lemons
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • Powdered sugar for dusting


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Cream the ricotta and granulated sugar together until smooth.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the Limoncello and lemon zest.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually fold the dry ingredients into the wet mixture until just combined.
  7. Pour the batter into the prepared cake pan.
  8. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool completely before removing from the pan and dusting with powdered sugar.
