Ingredients
- 1 ½ cups ricotta cheese
- 1 cup granulated sugar
- 3 large eggs
- ¼ cup Limoncello
- Zest of 2 lemons
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Cream the ricotta and granulated sugar together until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the Limoncello and lemon zest.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared cake pan.
- Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely before removing from the pan and dusting with powdered sugar.
