Ingredients

  • 1 lb sirloin steak, cubed
  • 2 large potatoes, diced
  • 4 strips of bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Chives for garnish (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Parboil diced potatoes until just tender, about 5-7 minutes.
  3. In a cast iron skillet, sear the cubed steak until medium-rare, about 5 minutes.
  4. Combine the cooked steak, parboiled potatoes, crumbled bacon, and half of the cheese in a bowl.
  5. Spread the mixture in the skillet and top with remaining cheese.
  6. Bake in the oven for 20 minutes until the cheese is bubbly and golden.
  7. Broil for an additional 3-5 minutes for a crispy topping.
  8. Serve hot, garnished with sour cream and chives.
