A crispy panini bursting with savory chicken, vibrant pesto, and melted cheese, providing a healthy protein boost.
Ingredients
- 2 grilled chicken breasts, sliced
- 1/2 cup basil pesto
- 8 oz fresh mozzarella, sliced
- 4 pieces artisan bread (ciabatta or focaccia)
- Salt and pepper, to taste
Instructions
- Grill the chicken breasts until fully cooked and season with salt and pepper.
- Spread a generous amount of basil pesto on one side of each piece of bread.
- Layer grilled chicken slices and mozzarella on top of the pesto on two pieces of bread.
- Top with the remaining pieces of bread, pesto side down.
- Grill the assembled sandwich in a pan or panini press until the bread is golden brown and the cheese is melted.
- Let the panini rest for a minute before slicing and serving.
Notes
For added flavor, drizzle balsamic glaze over the panini before serving.
