Description

A crispy panini bursting with savory chicken, vibrant pesto, and melted cheese, providing a healthy protein boost.


Ingredients

  • 2 grilled chicken breasts, sliced
  • 1/2 cup basil pesto
  • 8 oz fresh mozzarella, sliced
  • 4 pieces artisan bread (ciabatta or focaccia)
  • Salt and pepper, to taste


Instructions

  1. Grill the chicken breasts until fully cooked and season with salt and pepper.
  2. Spread a generous amount of basil pesto on one side of each piece of bread.
  3. Layer grilled chicken slices and mozzarella on top of the pesto on two pieces of bread.
  4. Top with the remaining pieces of bread, pesto side down.
  5. Grill the assembled sandwich in a pan or panini press until the bread is golden brown and the cheese is melted.
  6. Let the panini rest for a minute before slicing and serving.

Notes

For added flavor, drizzle balsamic glaze over the panini before serving.
