Ingredients
- 1 head cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 ripe mango, pitted and peeled
- 1-2 habanero peppers, stems removed
- 2 tablespoons lime juice
- 1 tablespoon honey (or maple syrup for vegan)
- Salt to taste
Instructions
- Preheat oven to 425°F (220°C).
- In a bowl, toss cauliflower florets with olive oil and salt.
- Spread cauliflower on a baking sheet and roast for 25 minutes, until crispy.
- While the cauliflower is roasting, blend mango, habanero peppers, lime juice, and honey in a food processor until smooth.
- Once the cauliflower is cooked, toss it in the mango-habanero sauce until well-coated.
