Ingredients
- 1 cup ripe mango, peeled and cubed
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp grated fresh ginger
- 1 clove garlic, minced
- 1 tsp cornstarch
- 1 tbsp water
- 4 (6 oz) skin-on salmon fillets
- 1 tbsp neutral oil
- 1 tbsp lime juice
- 2 tbsp chopped red onion
- Cilantro, to taste
- Salt and pepper, to taste
Instructions
- Make the glaze: blend mango into a puree, then combine with soy sauce, honey, rice vinegar, ginger, and garlic in a saucepan.
- Bring to a simmer and thicken with a cornstarch slurry until glossy.
- Season salmon fillets with salt and pepper.
- Heat oil in a pan over medium-high heat, sear salmon skin-side down for 3-4 minutes.
- Flip the salmon and cook for an additional 2-3 minutes, or until it reaches an internal temperature of 125-130°F.
- Spoon warm glaze over the fish and top with mango salsa made from diced mango, lime juice, red onion, and cilantro.
Notes
For best results, use an instant-read thermometer to check salmon doneness. If the glaze separates, whisk it back together over low heat.
